Meredith holds a Master of Science from the University of Idaho, where she was awarded Outstanding Dietetic Student in the Coordinated Program in Dietetics. She is a Registered Dietitian Nutritionist (RDN) and a Certified Dietitian (CD) in the state of Washington. She is a member of the Academy of Nutrition & Dietetics and is Co-Editor of the Vegetarian Nutrition Dietetic Practice Group Quarterly Newsletter. She is currently working on obtaining her Integrative & Functional Nutrition Certified Practitioner (IFNCP) Credential through the Integrative and Functional Nutrition Academy. She has more than five years of experience designing and leading grocery store tours, developing nutrition-focused course content, and teaching plant-based cooking classes. Meredith also has experience guiding healthy eating choices using mindfulness practices and a holistic, Intuitive Eating approach.

Meredith’s journey into the nutrition field was a bit unconventional. She obtained dual Bachelor of Arts degrees from the University of Oregon in International Studies and Spanish, and then proudly served as a Peace Corps Volunteer in Rwanda. She has worked with diverse populations as an in-home educator for parents and prenatal women and as a child and family advocate. As a Licensed Dietitian in Oregon, she helped establish a nutrition program at a Federally Qualified Health Center. These prior experiences have shaped her perspective as a nutrition professional and have enhanced her counseling and education skills.
Relationship-building is an integral component of Meredith’s practice. She strives to understand the root causes and accounts for a range of factors beyond food and nutrition, including sleep habits, stress levels, physical activity/movement, and family and social networks. Each plan is individualized and the pace can easily be modified because change looks different for each person.
Meredith welcomes individuals and families from diverse cultural backgrounds. She practices multicultural nutrition counseling and is always open to continuing to build her knowledge and understanding in this area through cultural humility.
As an avid outdoor enthusiast, some of Meredith’s favorite activities include hiking and jogging on local trails, backpacking, rock climbing, and stand-up paddleboarding. She enjoys exploring National Parks and Monuments, international travel, tending to her garden, and cooking. She is passionate about building her mountaineering skills and hopes to add more local and far-flung summits to her list.
