Ingredients
- 1 14 ounce can black beans drained and rinsed
- 2 ears-worth fresh raw corn kernels , removed from the cob (or 2 cups frozen corn kernels)
- 1 red bell pepper , seeded and chopped
- 1/4 red onion , chopped
- 1 1/2 teaspoons ground cumin
- 1 teaspoon paprika
- pinch cayenne
- 1/2 jalapeno , seeded and chopped
- 1-2 limes , juiced
- 2 tablespoons extra virgin olive oil
- Handful fresh cilantro , chopped
- salt and pepper , to taste
