African Sweet Potato Stew with Red Beans

Instructions
In a large pot, heat oil over medium heat. Add onion and cover and cook for 5 minutes or until tender.
Add garlic and sweet potato and next 10 ingredients (through chilies). Cover and cook on medium until sweet potatoes are tender, about 30 minutes.
Take a potato masher and mash up your stew so it becomes thick and chunky.
Spoon 1 cup cooking liquid into a small bowl. Add peanut butter, stir well with a whisk. Stir peanut butter mixture into stew.
Stir in handfuls of peanuts, depending on preference.
