African Sweet Potato Stew with Red Beans

Instructions
  1. In a large pot, heat oil over medium heat. Add onion and cover and cook for 5 minutes or until tender.
  2. Add garlic and sweet potato and next 10 ingredients (through chilies). Cover and cook on medium until sweet potatoes are tender, about 30 minutes.
  3. Take a potato masher and mash up your stew so it becomes thick and chunky.
  4. Spoon 1 cup cooking liquid into a small bowl. Add peanut butter, stir well with a whisk. Stir peanut butter mixture into stew.
  5. Stir in handfuls of peanuts, depending on preference.
  6. Serve with lime wedges.
