Place apples in a casserole dish. Mix the apples with lemon juice, cinnamon, and currants or raisins (optional).
Add enough water to cover the bottom of the dish by ½ inch.
Cover and bake for 30-40 minutes or until apples are soft.
Maple Cashew Cream
In a high speed blender, combine all ingredients, starting with ¼ cup water and blend until smooth. Add water until desired consistency is reached.
* If you don't have a high-speed blender like a VitaMix, you might want to blend the cashews first before adding the other ingredients, this helps to reduce clumping. This should be a smooth creamy whipped topping. Allow to cool in refrigerator for a while before serving.
