Ingredients
- 4 apples , cored and cut in half
- 1/2 lemon , juiced
- 1/2 teaspoon cinnamon
- 1 tablespoon currants or raisins , (optional)
Optional Topping: Maple Cashew Cream
- 1 1/2 cups raw cashews , soaked for up to 2 hours
- 1/4 cup maple syrup or agave nectar
- 2 tablespoons coconut oil , melted
- 1 teaspoon vanilla
- 1/8 teaspoon almond extract , (optional)
- 1/4 cup water , plus more as needed

Instructions
- Preheat the oven to 350 degrees F.
- Place apples in a casserole dish. Mix the apples with lemon juice, cinnamon, and currants or raisins (optional).
- Add enough water to cover the bottom of the dish by ½ inch.
- Cover and bake for 30-40 minutes or until apples are soft.
Maple Cashew Cream
- In a high speed blender, combine all ingredients, starting with ¼ cup water and blend until smooth. Add water until desired consistency is reached. * If you don't have a high-speed blender like a VitaMix, you might want to blend the cashews first before adding the other ingredients, this helps to reduce clumping. This should be a smooth creamy whipped topping. Allow to cool in refrigerator for a while before serving.
