Ingredients
- 1 large onion coarsely chopped
- 5 cloves garlic minced
- 1-2 tablespoons extra virgin olive oil
- 8 carrots chopped into 1-inch cubes
- 1 potato peeled and cubed
- mineral broth or water
- 1/2-3/4 cup fresh basil
- sea salt to taste

Instructions
- In a soup pot over medium heat, saute the onions and garlic with a pinch of sea salt in olive oil for 3-4 minutes until the onions are translucent.
- Add the carrots, potato, and just enough broth or water to cover the vegetables. Bring to a boil, cover, reduce heat, and simmer for 20-30 minutes.
- Add fresh basil and puree the soup in a blender or directly in the pot with an immersion blender; serve.
