Ingredients

large
onion
coarsely chopped

cloves
garlic
minced
1-2
tablespoons
extra virgin olive oil

carrots
chopped into 1-inch cubes
1
potato
peeled and cubed
mineral broth or water
1/2-3/4
cup
fresh basil
sea salt
to taste
Instructions
In a soup pot over medium heat, saute the onions and garlic with a pinch of sea salt in olive oil for 3-4 minutes until the onions are translucent.
Add the carrots, potato, and just enough broth or water to cover the vegetables. Bring to a boil, cover, reduce heat, and simmer for 20-30 minutes.
Add fresh basil and puree the soup in a blender or directly in the pot with an immersion blender; serve.
