If you only have almonds at home, almond meal is easily made using a coffee grinder, food processor, or high-powered blender.

  1. Preheat over to 375 degrees F.
  2. Grind the coconut and fennel seeds in a coffee grinder. Mix with almond meal.
  3. Season the salmon with sea salt and pepper.
  4. Dip the salmon in the coconut oil to coat and then dip in the almond meal mixture until lightly coated.
  5. Bake in oven for 10-15 minutes. Broil for 2-4 additional minutes or until golden brown.
