Detoxing Beet and Carrot Salad
This recipe is liver-detoxifying, helps to restore estrogen balance, and boost progesterone production. It is high in natural sugars, so be sure to pair it with a protein such as fish, chicken, or lamb! Equipment needed: grater and a jar with a lid

Ingredients

cups
beets
shredded, peeled
2

carrots
shredded, unpeeled

walnuts
raw, chopped

scallions
chopped
1/4

parsley
fresh, chopped
dressing

olive oil

orange
freshly grated

orange juice
freshly juiced

apple cider vinegar

to taste
Instructions
Combine all salad ingredients in a bowl.
To make the dressing, combine all ingredients in a jar and close with a tight fitting lid. Shake until well combined.
Pour dressing over salad and toss until coated.
Serve at room temperature or chilled.
Keeps well for up to four days.
AIP Option: omit the walnuts and replace the cumin with AIP compliment spice of your choice
