Easy Roasted Chicken
This recipe can be used as the base for a variety of chicken salads and can simply be added to any stir-fry or vegetable dish.

Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine the olive oil, vinegar, salt and pepper.
  3. Add the chicken breast to the liquid mixture, coating each piece. Let sit for 5-10 minutes.
  4. Arrange the chicken in an even layer on a baking sheet or roasting pan, drizzle leftover oil mixture on top of the breasts.
  5. Cook until internal temperature of each breast reaches 160-165 degrees F, about 20-30 minutes.
  6. Can be served immediately or cool completely, remove any skin, and use in a variety of salads.
