Ingredients
Apple Vinaigrette:

apple
tart green, peeled, cored, and chopped

shallots
minced

mustard

honey

apple cider vinegar

salt
to taste
black pepper
to taste
Salad:
1
fennel
bulb, trimmed, cored and sliced

apple
tart, cored and sliced

cups
spinach

cup
walnuts
or hazelnuts, toasted
1/4
cup
Vermont Cheddar cheese
shredded
Instructions
In a blender or food processor, combine all vinaigrette ingredients and process until emulsified. In a large bowl, combine fennel, apples, spinach, and hazelnuts. Toss well with vinaigrette and sprinkle with cheese.
