Fruit and Nut Rice Pilaf
Fresh fruit can be substituted for the dried fruit in this recipe if desired. Fruit and nuts are great sources of Vitamins C and E, both of which are powerful antioxidants.

  1. Heat olive oil in a large skillet over medium heat. Add onion and celery, and saute 5 minutes until tender.
  2. Add broth and fruit, bring to a boil. Cover; reduce heat, and cook another 5 minutes, until fruit is softened.
  3. Add the rice to the skillet. Cook, stirring often for 4 minutes, until rice is heated through. Stir in walnuts, parsley, and season with salt and pepper to taste. Serve hot.
