Low FODMAP Lemony Green Beans
A great side dish for Thanksgiving, or any time of the year. The toasted nuts are optional, but add a nice crunch.

Instructions
Wash the green beans and trim off the ends.
Heat a large skillet over medium heat. Add the olive oil, and once hot, add the green beans, salt, and pepper. Cook while stirring for about 3 minutes.
Add ΒΌ cup water to the skillet, cover, and continue to cook until the beans are soft and tender, 10-15 minutes. Add additional water to the pan if it gets dry during cooking.
Stir in the lemon zest and juice. Taste and adjust seasoning as needed. Top with the toasted nuts if desired and serve warm.
