- Cut the zucchini in half lengthwise. Cut each half again lengthwise. Cut each quarter width-wise into 1/2-inch dice.
- Heat a large skillet over medium-high heat. Add the oil and once hot, add the zucchini and all of the spices.
- Let cook for a couple of minutes until the zucchini is brown on the one side, then flip and let brown on the other side. Continue cooking until the zucchini can be easily pierced through with a fork.
- Pour the lemon juice over top and stir to combine. Remove from skillet and enjoy!
