Quinoa Flour Zucchini Banana Bread
Zucchini is a popular summer squash that provides a great source of vitamin A, one cup of slices provides 40% of the Daily Value (DV).

Instructions
  1. Preheat oven to 350°F, and lightly oil a bread loaf pan.
  2. Peel the bananas and place into a medium sized mixing bowl. Mash the bananas with a fork.
  3. Add eggs, coconut milk, vanilla and mix thoroughly.
  4. Grate the whole zucchini and add to the mixture. Combine thoroughly with wet ingredients.
  5. Add the quinoa flour, baking powder, salt and cinnamon, and mix well.
  6. Mix in chopped nuts, and if using add honey or other sweetener.
  7. Pour the batter into the loaf pan and bake for 45 minutes or until bread tests clean.
  8. Serve with Greek yogurt, sliced fruit and beverage.
