In a high speed blender or food processor, process nuts, dates, and salt. Evenly distribute in the bottom of a pie plate to form the crust.
Filling
Place all ingredients except psyillium husk into a high speed blender and process until mixture is very smooth, adding additional apple juice as needed to keep the mixture moving.
Add psyillium and blend another 30 seconds.
Pour into prepared pie crust and chill overnight (or for at least 3 hours).
