Salmon Cucumber Bites

Ingredients

Paleo mayonnaise
1/4
teaspoon
smoked paprika
1/4
teaspoon
Tabasco
1/2

salmon
,cooked and flaked into large pieces

tablespoon
shallots
, minced
1
tablespoon
chives
, chopped
kosher salt
, to taste
pepper
, freshly ground (to taste)

English cucumber
, peeled and cut crosswise into 3/4-inch thick slices

cherry tomatoes
, quartered

bunch
chive sprigs
, (optional garnish)
Instructions
Combine mayonnaise, smoked paprika, and Tabasco in a small bowl and mix thoroughly.
Taste for seasoning and add more Tabasco if desired.
Combine the salmon, shallots, chives, salt and pepper in a separate bowl.
Gently mix in the spicy mayonnaise.
Use a melon baller or teaspoon to gently scoop out the center of each cucumber slice, making sure not to scoop all the way through.
Divide the salmon mixture into each cup. Top each with a cherry tomato slice and fresh chives if desired.
