Instructions
  1. In a soup pot over medium heat, sauté the onion, garlic, and mushrooms with a pinch of sea salt in olive oil for 3 to 4 minutes; until onions are translucent.
  2. Add the broth or water and bring to a boil. Turn down the heat and simmer for 5 to 10 minutes.
  3. Turn off the heat. Add the arugula or bok choy, lime juice, seaweed sprinkles, sea salt, and black pepper. Serve garnished with scallions.
