Ingredients
- 1/4 cup water
- 60 grams spinach shredded (2 CHO)
- 1 tablespoon fresh serrano chili seeds removed and minced
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/8 teaspoon sea or rock salt
- 2 teaspoons butter or olive oil
- 15 grams scallion finely sliced (1 CHO)
- 60 grams paneer cheese (Indian cottage cheese) cubed (2 PRO, 2 CHO)

Instructions
- Add the water, spinach, chili, and all of the spices to a blender or food processor. Blend until somewhat smooth.
- Heat the butter or oil in a medium skillet over medium-high heat. Add the scallions, along with the blended spinach mixture. Cook, stirring occasionally, for 5-6 minutes.
- Add the cubed paneer to the skillet and cook for another 10 minutes on medium, stirring occasionally. Add water to the skillet if the sauce becomes too dry.
