Cut a slit into the potato, fluff up the inside of the cooked potato, and mix in any of the following fillings:
• Sauteed spinach or kale with garlic
• Broccoli cut into small pieces, blanched and sautéed with garlic and olive oil
• Sauteed shiitake mushrooms and onions
• Spoonful of miso and chopped fresh herbs such as basil, parsley, chives, or cilantro
• Roasted garlic and olive oil
