  1. Heat the oil in a medium saucepan or wok over medium-high heat. Add the chicken and cook, stirring frequently, for 2-3 minutes until somewhat opaque.
  2. Add the scallions and mushrooms. Continue to cook, stirring frequently, until the chicken is completely cooked through.
  3. Meanwhile, combine the water, tamari, peanut butter, garlic powder, and ginger powder in a small cup. Mix well with a fork to form a sauce. Pour the sauce over the stir fry, and stir in the basil. Cook for another 2-3 minutes until the sauce is heated through. Remove from the heat and serve.
