  1. Scoop out the flesh (save the flesh) of the zucchini and place in a baking dish.
  2. Chop the zucchini flesh into small chunks.
  3. Mix zucchini flesh with tomato, white fish, and onion.
  4. Stir parsley into the zucchini mixture and season with garlic powder, salt, and pepper to taste.
  5. Stuff the zucchini boats with the white fish stuffing.
  6. Grate cheddar cheese over the top of the stuffed zucchini.
  7. Pour 1/3 cup of water into the baking dish, cover with foil and bake at 350 F for 20 minutes.
  8. Uncover and bake for an additional 5 minutes.
