Apple Bok Choy Salad
  • 3 or 4rounded tablespoons yogurtor mayonnaise (Veganaise works as well)
  • 2 or 3 tablespoons wine vinegarwhite, or white balsamic vinegar
  • 2teaspoons honeyor unrefined sugar
  • 1teaspoon salt
  • 6cups bok choyfinely chopped (about 1 medium head)
  • 1large applejulienned into matchsticks
  • 1large carrotjulienned into matchsticks (or 1/2 red bell pepper, julienned)
  • 1/2 white onionfinely sliced, or red onion
  1. In a large bowl, whisk together the yogurt, vinegar, sugar and salt until smooth and creamy.
  2. Add bok choy, apple, carrot and onion.
  3. Mix well, adjust seasonings to taste if necessary and serve right away or chill before serving.
