  1. Whisk lime juice, oil, fish sauce, crushed red pepper, and stevia in a large bowl.
  2. Add shrimp, bell pepper, cucumber, and fresh herbs; toss to coat.
  3. Optional: serve over a bed of fresh salad greens.
