Zucchini Noodles
These make for a great grain-free substitution for noodles or pasta.
Ingredients
Instructions
  1. Preheat oven to 400 degrees F.
  2. Slice the ends off the zucchinis.
  3. Use a vegetable peeler to shave off strips of zucchini into a bowl. It’s easier than you think it’ll be.
  4. Drizzle a tablespoon or two of olive oil onto the zucchini. Toss with fresh ground black pepper.
  5. On a baking sheet lined with parchment paper, layer the zucchini few layers deep. Sprinkle with a little sea salt.
  6. Bake for about 10 minutes, until the zucchini has lost its crunch.
