Zucchini Noodles
These make for a great grain-free substitution for noodles or pasta.

Ingredients
2 to 3
zucchini
medium
olive oil
black pepper
fresh ground
sea salt
Instructions
Preheat oven to 400 degrees F.
Slice the ends off the zucchinis.
Use a vegetable peeler to shave off strips of zucchini into a bowl. It’s easier than you think it’ll be.
Drizzle a tablespoon or two of olive oil onto the zucchini. Toss with fresh ground black pepper.
On a baking sheet lined with parchment paper, layer the zucchini few layers deep. Sprinkle with a little sea salt.
Bake for about 10 minutes, until the zucchini has lost its crunch.
