This coconut flour bread is a great alternative for those following a low FODMAP or other grain-free diet. Enjoy it for sandwiches, toast, or warm from the oven with your favorite spread!
Preheat the oven to 350 degrees F. Grease a small (9x5x3”) loaf pan.
In a large bowl, whisk together the eggs, ghee or coconut oil, and honey.
In a separate bowl, combine the coconut flour with the baking powder and salt. Add to the liquid ingredients and mix until there are no lumps.
Pour into the greased loaf pan and bake for 40 minutes, or until the crust is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool for 15 minutes. Remove from the pan and allow to completely cool on a wire rack.
Slice and enjoy!
