Massaged Kale Salad with Citrus and Pomegranate

If you normally find kale to be too fibrous and tough, we hope you’ll give this massaged kale salad a try! Massaging the kale leaves helps to soften them and ensures that they thoroughly absorb the delicious vinaigrette dressing- leading to more flavor in every bite! This kale salad is especially supportive for women’s fertility and egg quality as it is packed with antioxidants from the dark green kale, citrus fruit, and pomegranate seeds.

Serves 4-6 as a side

 

Ingredients:

  • 1 bunch Lacinato kale stems removed, torn into large pieces

  • 1 teaspoon sea salt

  • 1⁄4 cup extra-virgin olive oil

  • 2 tablespoons apple cider vinegar

  • 1 blood orange or small naval orange, peeled and sliced into thin rounds

  • 1⁄2 cup pomegranate seeds, strawberries, dried cranberries, or dried cherries

  • 1⁄4 cup toasted walnuts or other nuts

  • Ground black pepper to taste, optional

  • 2 oz goat cheese or feta cheese, optional

Directions:

  1. Place kale in a large bowl and sprinkle sea salt on top. Using your hands, massage the kale leaves, working the salt into the leaves. If you’ve got some large leaves, tear them into smaller pieces as you go. Continue to massage for about 5 minutes, until kale has turned a vibrant green and softened. Set aside for at least 10 minutes.
  2. In a small bowl, whisk together the olive oil and apple cider vinegar. Pour over the kale and toss to coat.
  3. Top the kale with blood oranges, pomegranate seeds, walnuts, and a little bit of black pepper. If desired, sprinkle with goat cheese or feta.
