Whole Milk Yogurt Bowls with Coconut Pepita Granola & Berries

Including whole milk dairy products as part of a fertility-promoting eating pattern can help support regular ovulation and provide a good source of calcium, vitamin D, and protein. This recipe helps you build a yogurt breakfast bowl with nourishing whole milk greek yogurt, antioxidant-rich berries, and a delicious homemade granola. Pepitas add crunch and a source of minerals like zinc, iron, and magnesium.

Prep Time: 5 minutes
Cook Time: 40 minutes
Yields: 6 cups of granola

 

Ingredients:

For the granola:

  • 1⁄2 cup pure maple syrup
  • 1⁄3 cup extra virgin olive oil
  • 1 teaspoon vanilla extract
  • 1⁄4 teaspoon cinnamon
  • 3⁄4 teaspoon sea salt
  • 3 cups old-fashioned rolled oats
  • 1 cup large coconut flakes
  • 1⁄4 cup pepitas
  • 1 cup macadamia nuts, roughly chopped

For the yogurt bowls:

  • Whole milk greek yogurt of choice
  • Berries of choice
  • Prepared granola
  • Optional drizzle of honey or pure maple syrup

    Directions:

    1. Start by preparing the granola. Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
    2. In a large mixing bowl, combine the maple syrup, olive oil, vanilla, cinnamon, salt and stir to mix. Add the oats, coconut, nuts/seeds and stir everything to coat. Spread it evenly on a large rimmed baking sheet.
    3. Bake for 35-40 minutes, stirring a few times throughout that time, until the coconut flakes are golden. Remove to cool completely.
    4. Assemble a yogurt bowl by portioning out a scoop of yogurt in a bowl. Option to add a drizzle of honey or pure maple syrup to sweeten. Top with berries and granola and enjoy!
    Notes: 

    For a dairy-free yogurt bowl, try an unsweetened cashew or coconut yogurt with a bit of honey and mix in a scoop of collagen to provide a source of protein. You can also feel free to mix up the nuts and seeds in the granola recipe. Walnuts are another great fertility supportive nut, providing a good source of omega-3 fats.
