This creamy chocolate avocado pudding comes together quickly and provides a good source of healthy fats, B vitamins, magnesium, and fiber for a satisfying and balanced treat.
Serves 4-6
Ingredients:
- 2 avocados, pitted
- ½ cup raw cacao powder or carob powder
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
- 3 dates, pitted
- 2 tablespoons almond butter
- 1 ½ cups water (or more as needed)
- Optional: 1 tablespoon protein powder
- Optional: Cacao nibs, to top
Directions:
- In the bowl of a food processor, add the avocados, cacao powder, vanilla, salt, dates, almond butter, water, and protein powder (if using). Blend until smooth and creamy, adding more water as needed.
- Chill in the fridge for at least 1 hour before serving.
- Top with the cacao nibs, if using.
