Instructions
Preheat oven to 375 degrees. Heat 1 teaspoon olive oil or cooking spray in the large skillet on medium-high heat and saute the onion until tender. While you’re sautéing the onion, place 1 cup brown rice, carrots, spinach, swiss chard leaves, sunflower seeds, sun-dried tomato, and garlic in the food processor and pulse until well chopped.
Reduce the heat to medium add in pulsed veggies and all the spices in pan– sauté for 5 minutes.
Remove pan from heat and transfer mixture to a large mixing bowl. Stir in veggie broth and tahini (or almond butter). Add the 1 cup of rice, sesame seeds, nutritional yeast, and olive oil, mix well.
Form mixture into 4-6 patties (depending on the size you want) with your hands. Or use a 1/3 cup measure to scoop out and form into evenly shaped patties. You can put the patties on a parchment paper-lined baking sheet and put directly into oven or fry first (see step 5).
Optional: Wipe out the large skillet and spray it with a little more olive oil cooking spray. Sauté burgers on medium heat until browned on both sides then turn off the heat.
Transfer burgers to an oven-safe baking sheet and bake for 12 to 15 minutes, until the burgers are firm and cooked through. If skipping step 5, patties may need to bake for 20-30 minutes. Serve.
