Ingredients
Maple Cashew Cream: optional topping
- 1 1/2 cup raw cashews , soaked for up to 2 hours
- 1/4 cup maple syrup
- 2 tablespoons coconut oil , melted
- 1 teaspoon vanilla
- 1/8 teaspoon almond extract , (optional)
- 1/4 cup water , more as needed

Instructions
- Preheat the oven to 350 degrees F.
- Place apples in a casserole dish, cut side up. Toss the apples with lemon juice, cinnamon, and currants or raisins (optional).
- Add enough water to cover the bottom of the dish by 1/2 inch. Cover and bake for 30-40 minutes or until apples are soft.
Maple Cashew Cream
- In a high speed blender*, combine all ingredients, starting with 1/4 cup water and blend until smooth. Increase water until reached desired consistency. This should be a smooth cream whipped topping. Allow to cool in the refrigerator for a while before serving.
Recipe Notes
*If you don't have a high speed blender like a VitaMix, you might want to blend the cashews first before adding the other ingredients, this helps to reduce clumping.
