Ingredients
Filling
- 4 cups pumpkin , fresh (cubed)
- 5 dates , soft (pitted)
- 1/2 cups agave syrup
- 1/4 cup maple syrup , (optional)
- 1 1/2-2 cups apple juice , fresh
- 3-4 tablespoons ground psyillium husks
- 1 tablespoon pumpkin pie spice
- 1 teaspoon sea salt

Instructions
Crust
- In a high speed blender or food processor, process nuts, dates, and salt. Evenly distribute in the bottom of a pie plate to form the crust.
Filling
- Place all ingredients except psyillium husk into a high speed blender and process until mixture is very smooth, adding additional apple juice as needed to keep the mixture moving.
- Add psyillium and blend another 30 seconds.
- Pour into prepared pie crust and chill overnight (or for at least 3 hours).
