Ingredients
- 2 teaspoons olive oil
- 60 grams chicken cubed (1 PRO)
- 30 grams scallions finely sliced (2 CHO)
- 70 grams white mushrooms or crimini mushrooms, sliced (2 CHO)
- 2 tablespoons water
- 1 tablespoon tamari (1 CHO)
- 1 1/2 tablespoons creamy peanut butter (4.5 CHO)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ginger powder
- 20 grams basil rough chop (.5 CHO)

Instructions
- Heat the oil in a medium saucepan or wok over medium-high heat. Add the chicken and cook, stirring frequently, for 2-3 minutes until somewhat opaque.
- Add the scallions and mushrooms. Continue to cook, stirring frequently, until the chicken is completely cooked through.
- Meanwhile, combine the water, tamari, peanut butter, garlic powder, and ginger powder in a small cup. Mix well with a fork to form a sauce. Pour the sauce over the stir fry, and stir in the basil. Cook for another 2-3 minutes until the sauce is heated through. Remove from the heat and serve.
