Ingredients
- 1 cup salmon , cooked and broken into pieces (canned or smoked salmon also works)
- Avocado mayonnaise (recipe below)
- 2 stalks celery , diced
- 1/2 cucumber or bell pepper, seeded and diced
- 1/2 cup green onion or red onion, chopped
- 1-2 cloves garlic , crushed
- capers
- 1/2 cup parsley , finely chopped
- sea salt or Herbamare, to taste
Avocado "Mayonnaise:"
- 1-2 small avocados
- 1-3 tablespoons fresh lemon juice
- 1-3 tablespoons extra virgin olive oil
- 2-3 tablespoons water
- black pepper , to taste
- Fresh lettuce , chopped tomatoes, and any other veggies you have!

Instructions
- First prepare the avocado “mayo”: place all ingredients into a bowl or large mug and blend with an immersion (hand held blender). You can also use a blender, Magic-Bullet, or food processor, but given the small quantity of “mayo” you will be making, it is much easier and more efficient to use a hand blender.
- Place salmon, veggies and herbs, and a few spoonfuls of avocado “mayo” in a mixing bowl and gently mix together with a fork.
- Serve over a bunch of fresh lettuce greens or salad mix of choice.
