First prepare the avocado “mayo”: place all ingredients into a bowl or large mug and blend with an immersion (hand held blender). You can also use a blender, Magic-Bullet, or food
processor, but given the small quantity of “mayo” you will be making, it is much easier and more efficient to use a hand blender.
Place salmon, veggies and herbs, and a few spoonfuls of avocado “mayo” in a mixing bowl and gently mix together with a fork.
Serve over a bunch of fresh lettuce greens or salad mix of choice.
