Ingredients
- 2 teaspoons extra virgin olive oil
- 60 grams chicken diced (1 PRO)
- 60 grams turkey diced (1 PRO)
- 70 grams cauliflower (3 CHO)
- 1/4 cup water
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/2 teaspoon pepper
- 35 grams raw spinach (2 CHO)
- 1 tablespoon fresh parsley minced

Instructions
- Heat the olive oil in a medium skillet over medium heat. Add the chicken, turkey, cauliflower, and water to the pan. Cover the saucepan with a lid and let cook for about 12 minutes, stirring occasionally, until the meat is cooked through and the cauliflower is soft.
- Turn off the heat and season with cumin, garlic powder, salt and pepper.
- Put the raw spinach on a serving plate. Top the spinach with the chicken and turkey mixture. Sprinkle fresh parsley atop the finished dish.
