Ingredients
- 1/4 cup chia seeds
- 1/2 cup shelled hemp seeds
- 1 cup water
- 1 teaspoon vanilla
- 4 pitted dates
- Dash of salt

- chopped nuts , pumpkin seeds, sunflower seeds, nut butter, fresh fruit

Instructions
- Empty chia seeds into a bowl, mason jar, or the container you'll be storing the pudding in.
- In a blender, blend the hemp seeds, water, vanilla, dates, and salt until very smooth and creamy.
- Pour over the chia seeds and stir well. At first, they'll simply swim around in the liquid and they won't look much like pudding. Keep stirring for about 30 seconds to make sure there are no clumps.
- After 15-20 soaking minutes, the pudding is ready to eat. It'll also keep nicely covered in the fridge for a few days. Serve with optional toppings as desired.
Recipe Notes
If it has been in the fridge for a day and it's a bit stiff, just add a bit of water or almond milk.
