Add the onion powder, garlic powder, cayenne, salt and pepper to the beaten egg. Mix well with a fork to combine.
Using a cheese grater, grate the zucchini and add it to the beaten egg mixture. Toss to evenly combine the mixture.
Add the olive oil to a medium skillet over medium heat. Place the zucchini hash into the skillet and use a spatula to flatten it to about ½-inch thick. Cook the hash until the bottom
is golden, then flip the entire hash and sprinkle the cheddar cheese on top of the hash.
Cook until the other side is golden, then remove from heat. Season with salt, pepper and fresh herbs if desired.
