Ingredients
- 1 teaspoon oil
- 1 clove garlic minced
- 1/2 teaspoon curry powder or to taste
- 25 grams green beans cut into pieces
- 50 grams cauliflower cut into pieces
- 40 grams eggplant cut into pieces (can substitute mushrooms)
- 40 grams cucumber cut into pieces
- 1/2 cup water

Instructions
- Heat oil in sauce pan and fry garlic until fragrant.
- Add curry powder and stir through.
- Add vegetables and water.
- Cook briefly (approximately 5-10 minutes- don't overcook!) and serve immediately.
