Vanilla Chia Pudding
If you do not have a high-powered blender then you will want to soak to cashews for about 3 hours before blending them. Also, the whole vanilla bean may not completely blend in a regular blender so replace with 1 tablespoon non-alcoholic vanilla extract.

Instructions
  1. Place the cashews, water, coconut nectar or maple syrup, vanilla bean and salt into a high-powered blender and blend until smooth and ultra-creamy. Pour into a medium-sized bowl or glass container.
  2. Add the chia seeds, whisk together. Let soak on the counter at room temperature for about 1 hour. Then cover and transfer to the refrigerator to soak and thicken for at least 2 more hours.
  3. Scoop into serving bowls and sprinkle cinnamon on top.
