Instructions
Preheat the oven to 400 degrees.
Chop all of the veggies and the chicken into slightly larger than bite-size pieces.
Place the chicken and veggies into a medium roasting pan or baking sheet. Add the olive oil, salt, pepper, Italian seasoning, and paprika; toss to combine.
Bake for 15 minutes or until the chicken is cooked through and the veggies are crisp-tender.
