- 1 tablespoon tamari
- 3/4 tablespoon honey

- 2 small baby bok choy heads chopped
- 1 red or yellow pepper, sliced into strips
- 1/4 cup pumpkin seeds toasted (or 1/4 cup slivered almonds, toasted)

- Place all dressing ingredients in a bowl, blend well and set aside.
- Add all salad ingredients to dressing, toss well and serve.
