Ingredients
- 4 poblano peppers
- 4 tablespoons garlic-infused olive oil
- 3/4 pounds ground beef grass fed
- 2 carrots shredded
- 1 1/2 teaspoons salt
- 1/2 teaspoon coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon thyme
- 10 leaves swiss chard chopped
- 5 tablespoons tomato paste
- 2 tablespoons lemon juice
- 1/4 cup raisins

Instructions
- Preheat over to 350 degrees F.
- Add olive oil in a frying pan on medium high. When skillet is hot, add shredded carrots. Let carrots cook until tender, about 5 minutes.
- Add beef, spices, and salt to skillet and saute until browned. When meat is nearly cooked, add chard and lemon juice. Stir until chard is softened and turn off heat. Mix in raisins.
- Cut off top of poblano and slit down the side. Stuff filling into poblanos.
- Bake peppers for 35 minutes.
