Cuban Style Stuffed Peppers (SIBO)
These peppers have a bit of spice and a bit of sweet. Along with a healthy amount of veggies, protein, and fat, this is a one pot meal.

Instructions
  1. Preheat over to 350 degrees F.
  2. Add olive oil in a frying pan on medium high. When skillet is hot, add shredded carrots. Let carrots cook until tender, about 5 minutes.
  3. Add beef, spices, and salt to skillet and saute until browned. When meat is nearly cooked, add chard and lemon juice. Stir until chard is softened and turn off heat. Mix in raisins.
  4. Cut off top of poblano and slit down the side. Stuff filling into poblanos.
  5. Bake peppers for 35 minutes.
