Ingredients
- 1 medium onion chopped
- 1 rib celery chopped
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 pound carrots chopped
- 1 medium yam
- 3/4 inch-piece fresh ginger peeled and minced
- 1/4 teaspoon Red pepper flakes
- 3 cups veggie or chicken broth
- 1/2 teaspoon soy sauce
- 1/4 teaspoon brown sugar
- 1 teaspoon sesame oil
- 1 1/2 tablespoons peanut butter
- 1 cup milk (or non-dairy milk such as coconut or almond)

Instructions
- Heat the olive oil in a medium sauce pan. Add the onion, celery, and garlic, and cook until the onion is soft.
- Add the carrots, yam, and ginger to the onion mixture. Sprinkle in the red pepper flakes and add the broth.
- Simmer until the carrots are very tender. Then stir in the soy sauce, brown sugar, sesame oil, peanut butter, and milk.
- After everything is combined, carefully blend about 1 cup of the mixture at a time in a high-speed blender. Place blended soup into a serving bowl and it is ready to enjoy!
