Ingredients
- 1 pound shrimp tail-on, peeled
- 1 tablespoon parsley chopped
- 3 cloves garlic minced
- 3 tablespoons olive oil
- salt and pepper to taste

Instructions
- Rinse shrimp under cold water and remove tails if desired.
- Using a paring knife, slice the shrimp along the back side from head to tail, do not cut through the shrimp.
- Place shrimp in a container to marinate.
- Pour olive oil over shrimp and cover with garlic, parsley, salt and pepper.
- Cover container and let marinate for up to 1 hour.
- Heat oven to 350°F.
- Open shrimp to lay flat on a parchment-lined baking sheet.
- Bake for 15 minutes.
