Instructions
  1. Preheat the oven to 375 degrees F. Wash the potatoes thoroughly, making sure to remove all dirt from the skin. Poke a few holes into the potatoes with a toothpick, skewer, or tip of a knife to prevent them from bursting.
  2. Bake until the potatoes are soft and totally cooked through- anywhere from 30 minutes to 1 hour depending on the size and toughness of the potato.
  3. Cut a slit into the potato, fluff up the inside of the cooked potato, and mix in any of the following fillings: • Sauteed spinach or kale with garlic • Broccoli cut into small pieces, blanched and sautéed with garlic and olive oil • Sauteed shiitake mushrooms and onions • Spoonful of miso and chopped fresh herbs such as basil, parsley, chives, or cilantro • Roasted garlic and olive oil
