Apple Cobbler in a Jar

Instructions
  1. Preheat oven to 375 degrees F and lightly grease two half-pint sized jars with coconut oil.
  2. In a medium bowl, mix all of the cobbler topping ingredients together. Make sure all of the ingredients are incorporated very well. Form the dough into two equal sized balls using your hands and wrap tightly into plastic wrap. Place into the fridge while you prep the apples.
  3. Once the apples are peeled, core them and cut into thin slices or small cubes, place them into a bowl and toss with the remaining filling ingredients. Mix well and divide the apple filling into the jars.
  4. Take the dough out of the fridge- it should be firmer now- and roll it out between two pieces of parchment paper or plastic wrap. Don't press too hard, just enough to flatten it out into circles the size of the jars (use the lid for sizing).
  5. Carefully cover the apple filling with the cobbler dough, cut a small slit in the middle and sprinkle a little cinnamon on top.
  6. Place the jars on a baking sheet and bake for approximately 20 minutes. The topping should be browned and the filling should be bubbling. Serve warm and, if you'd like, add some dairy-free ice cream or whipped coconut cream on top.
