Ingredients
Apple Vinaigrette:
- 1/2 apple tart green, peeled, cored, and chopped
- 1 tablespoon shallots minced
- 1 teaspoon mustard
- 1 teaspoon honey
- 1/4 cup apple cider vinegar
- 1/2 cup olive oil
- salt to taste
- black pepper to taste
Salad:
- 1 fennel bulb, trimmed, cored and sliced
- 1 apple tart, cored and sliced
- 4 cups spinach
- 1/4 cup walnuts or hazelnuts, toasted
- 1/4 cup Vermont Cheddar cheese shredded

Instructions
- In a blender or food processor, combine all vinaigrette ingredients and process until emulsified. In a large bowl, combine fennel, apples, spinach, and hazelnuts. Toss well with vinaigrette and sprinkle with cheese.
