Celeriac is a versatile root vegetable and is a staple of those following a low FODMAP diet. It is a great source of many nutrients, including vitamin B6, magnesium, and potassium. These “fries” are delicious on their own or dipped into your favorite low FODMAP sauce or dip.

Ingredients
- 1 large head celeriac aka celery root
- 1 tablespoon coconut oil melted
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the oven to 400F.
- Wash and peel the celeriac, and chop into 1/4-1/2 inch thick wedges or fries.
- Toss with the oil, salt and pepper, then spread out on a greased or lined baking sheet.
- Bake 30-40 minutes or until golden brown and slightly crispy, flipping the fries every 15 minutes to prevent burning.
- Enjoy while hot.
