Low FODMAP Oven Baked Celeriac Fries
Celeriac is a versatile root vegetable and is a staple of those following a low FODMAP diet. It is a great source of many nutrients, including vitamin B6, magnesium, and potassium. These “fries” are delicious on their own or dipped into your favorite low FODMAP sauce or dip.

Instructions
  1. Preheat the oven to 400F.
  2. Wash and peel the celeriac, and chop into 1/4-1/2 inch thick wedges or fries.
  3. Toss with the oil, salt and pepper, then spread out on a greased or lined baking sheet.
  4. Bake 30-40 minutes or until golden brown and slightly crispy, flipping the fries every 15 minutes to prevent burning.
  5. Enjoy while hot.
