- In a large bowl, mash the avocados with a fork.
- Stir in the grated potatoes, lemon juice, salt, and pepper. Mix thoroughly.
- Form into patties.
- Heat a generous amount of olive oil in a heavy skillet over medium heat.
- Fry the patties until golden brown on one side. Flip once to cook the other side.
- Place on a paper towel to absorb the extra oil.
Variation: Add 1 medium zucchini, grated.
