Ingredients
- 2 whole bananas , ripe
- 2 whole eggs
- 1/4 cup coconut milk
- 2 teaspoons vanilla extract
- 1 whole zucchini
- 1 1/2 cups quinoa flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 3/4 cup walnuts , chopped
- 1/2 cup honey , (optional)

Instructions
- Preheat oven to 350°F, and lightly oil a bread loaf pan.
- Peel the bananas and place into a medium sized mixing bowl. Mash the bananas with a fork.
- Add eggs, coconut milk, vanilla and mix thoroughly.
- Grate the whole zucchini and add to the mixture. Combine thoroughly with wet ingredients.
- Add the quinoa flour, baking powder, salt and cinnamon, and mix well.
- Mix in chopped nuts, and if using add honey or other sweetener.
- Pour the batter into the loaf pan and bake for 45 minutes or until bread tests clean.
- Serve with Greek yogurt, sliced fruit and beverage.
